Summer is a great time to enjoy our Tandoori marinade on vegetables or meat, and in this case, the classic Indian Paneer cheese. Halloumi is an excellent substitute if you cannot find paneer. Paneer is found at Indian grocery stores and Whole Foods stores in the refrigerated section.
Every year when its summer, farmers' markets sell heirloom tomatoes. These tomatoes are my favorite. The weird-shaped tomatoes are so appealing. I use the green and yellow heirloom tomatoes in salads, whereas the red tomatoes go in making a tomato chutney. This tomato chutney is my mom's recipe.
Eggplant, known by different names such as brinjal or aubergine, is a popular vegetable in our world. Eggplants are good throughout the year. Eggplant skin is quite nutritious so cook your eggplant with the skin-on. Its spongy texture soaks up a lot of oil, so be careful and not use too much oil while cooking eggplant.
Let us switch our diets and switch to seasonal foods. Healthy, seasonal, local, and organic diets would work wonders and rejuvenate our bodies.
