Soup - Spinach, Lentils and Sweet Potato

It is almost Fall and I eat a lot of soups during fall and winter. Certainly, there are times when we all run out of ideas on making delicious soups to keep us warm, and here is one from my collection. This dark green thick soup has an added sweetness from sweet potato. If you make this amount, it will last you for a week. VegetarianServing Size: 4 to 6 servings Keeps well in the refrigerator for 2 weeks. Spinach Kebabs

Serves: 8 (2 kebabs each, although no one can eat just two!)Ingredients1 frozen pack spinach, thawed, squeezed to remove excess water and emptied in a microwavable container1 tablespoon curry powder1 tablespoon garam masala1 jalapeno, minced1 teaspoon salt OR as desired4 large potatoes, boiled and peeled1 tablespoon minced ginger and garlic2 tablespoons corn starch OR as neededOil sprayInstructionsSqueeze out water from spinach and heat spinach in a microwave for about 5-6 minutes or until piping hot. Palak Paneer

Ingredients2 cups paneer, cubed1 frozen pack spinach, thawed1 jalapeno, chopped1 tablespoon ginger garlic paste1/2 cup full fat plain yogurt1 tablespoon cumin seeds1/2 teaspoon cayenne powder1 teaspoon garam masalaSalt to taste3 tablespoons oil1 cup red onions, finely chopped2 tablespoons lemon juiceInstructionsHeat oil in a 3 qt pan and saute cumin seeds, jalapenos and onions until onions are brown in color, about 7-10 minutes over medium heat.Add ginger garlic paste and cook for another 2-3 minutes. Saag is a pureed green, typical Punjabi dish, it can be made with spinach only, mustard only, or a mix of these greens as I have done below.   Ingredients 4 cups chopped fresh mustard leaves 1 cup frozen chopped spinach 1 cube frozen fenugreek leaves OPTIONAL 1/2 teaspoon cayenne powder 2 teaspoons turmeric powder 1 Tablespoon grated ginger1 Tablespoon grated garlic2 Tablespoons corn meal 2 Tablespoons butter 1 cup red onion, finely chopped Salt to taste1 cup chopped Paneer cheese pieces, 1 inch cubes OPTIONAL   MethodIn a wide pot, boil 2 cups of water and add ginger, garlic, chopped spinach, fenugreek and mustard greens and cook partially covered for about 15 minutes, stirring every minute.Carefully puree this mixture...
