Chicken in Pistachio Sauce (Pista Murg)

Persian and Indian trade saw the introduction of these Kermit the frog colored nutty pistachios into Indian cuisine. Korma is to braise meat in fat. You will usually find that Korma is either red curry color, or white, but in this unique dish, I make korma with pistachios and that gives it a unique green color. Found in recipe books dating 1700 AD, this is an old recipe. Curried Beetroot and Ginger soup

Today, I made Curried Beetroot and Ginger soup. A simple recipe, and I made it with fresh beets. I hope you enjoy the recipe:   Ingredients   3 Tablespoons butter 1 Tablespoon oil 1 cup white onion, finely chopped 12 black peppercorns 3 beets, peeled and chopped in 1 inch cubes 4 inch piece of fresh ginger, roughly chopped 2 Tablespoons curry powder 1 cup whole milk plain yogurt OR 1/2 cup Greek yogurt 6 cups vegetable stock Salt to taste     Instructions In a 5 qt sauce pan, over medium heat, heat butter and oil. Carrot Pudding

Today is a snowy day in Washington, DC, and I am working from home. I woke up early this morning, and I made Carrot Pudding. Carrots taste better in winter, and hence I always try to make this recipe as much as I can in winter.   Carrot Pudding   Ingredients 3 Tablespoons ghee 4 cups grated carrots 2 cups whole milk 2/3 cup white granulated sugar 1/2 cup golden raisins 1/2 roasted cashew nuts, each split into two 1/2 teaspoon ground green cardamom   Instructions In a 3 qt sauce pan over medium heat, melt ghee.
