How To Prepare Delicious Ethiopian Beans Stew

This is an Ethiopian-inspired chickpea stew for the fall/winter season. It does take some planning, but I have seen that soaking raw red kidney beans and cooking them over three hours results in a better stew than using canned beans. I am offering a substitute for the Berbere spice, which is a quintessential spice in this recipe. You can find this spice at your local Ethiopian store or on Spice and Tea Exchange.

Kerala Chicken Stew

Kerala (meaning, land of coconuts) is a south Indian state known for its beautiful pristine beaches and backwaters. Seafood and coconut based recipes are plenty in Kerala. Most of the inhabitants of Kerala are Christian, and eating meat is prevalent in this region. This recipe reminds me of Chicken Pot Pie, which is my favorite American entree. This recipe is one of the easy stews from Kerala. I make this recipe with regular organic coconut milk. Thai Kitchen is the best brand of coconut milk, or Trader Joe's organic coconut milk is a close substitute. You can change the vegetables based upon what you have in the refrigerator. Rajasthan Lamb Curry

Today I was teaching a cooking class at a corporate event, and I had this lamb curry on my menu. Although this curry takes 90 minutes to cook/stew, it was worth the wait. The dish is from Rajasthan, it is a state which is entirely a desert. Food cooked from local ingredients is devoid of root vegetables and mostly, no meat.
