Paneer and Green Peas Korma

  Korma means to braise meat in ghee or oil. There are many kinds of Korma curries in India, and all of them involve using nuts (either almonds, or pistachios, or cashews). My Korma curry using Rupen's Korma Sauce is a moonlight colored coconut, cream, and almond sauce. This curry is mild, and I use the most popular Indian fresh cheese 'Paneer' that is available at an Indian store, and sometimes at high-end grocery stores. Chicken in Pistachio Sauce (Pista Murg)

Persian and Indian trade saw the introduction of these Kermit the frog colored nutty pistachios into Indian cuisine. Korma is to braise meat in fat. You will usually find that Korma is either red curry color, or white, but in this unique dish, I make korma with pistachios and that gives it a unique green color. Found in recipe books dating 1700 AD, this is an old recipe.
