Grilled Chicken and Lemon Sandwich

I make this sandwich ALL THE TIME! Who doesn't like a summer grilled chicken and lemon sandwich. The key is to let chicken marinate in lemon juice and salt pepper for a few hours. Time does its magic, and then you can grill away! If you are staying away from bread, then cook the chicken and add it to your salad. Enjoy!   Serves: 4  Ingredients  8 slices country bread, preferably thinly sliced 4 boneless skinless chicken breasts, butterflied and separate to make two half pieces 1/2 cup freshly squeezed lemon juice 1 cup finely chopped cilantro (along with its stalk) 1 teaspoon sea salt 1 teaspoon fresh ground black pepper 1 cup creme fraiche or mayonaisse 4 lettuce leaves 4 Tablespoons...

Mango Sawdust

Sawdust is a layered vanilla cream and crumbled cookie dessert from Macau. Here's my take on this classic dessert. The cookies must reduce to a sawdust like consistency, which is beyond crumble. Remove and set aside. Now blitz chopped mangoes for one minute or until they reduce to a pulp. Remove and set aside. Mix...

Paneer and Green Peas Korma

Korma means to braise meat in ghee or oil. There are many kinds of Korma curries in India, and all of them involve using nuts (either almonds, or pistachios, or cashews). My Korma curry using Rupen's Korma Sauce is a moonlight colored coconut, cream, and almond sauce. This curry is mild, and I use the most popular Indian fresh cheese 'Paneer' that is available at an Indian store, and sometimes at high-end grocery stores. Serves: 4  Ingredients  3 Tablespoons ghee or unsalted butter 8 oz Paneer cheese, chopped in 1-inch cubes 1 cup frozen green peas, thawed 1 bottle Rupen's Korma sauce    Instructions  In a medium-sized sauce pot over medium heat, melt ghee or butter. Add paneer, and...
