Paneer & Mixed Vegetable Pulao


Golden paneer sautéed in ghee. Fragrant basmati rice. Colorful vegetables gently folded into creamy, aromatic Korma. Comfort food and colors built in. Happy Holi!

Ingredients

  • 1 cup basmati rice

  • 1 jar Rupen’s Korma Sauce

  • 1 lb g paneer, cubed

  • 1 tbsp ghee

  • 1 small onion, sliced

  • 1 cup mixed vegetables (peas, carrots, corn, beans, bell peppers)

  • 1 ¾ cups water or light vegetable stock

  • Salt to taste

  • Fresh cilantro

 

Instructions

  1. Rinse and soak basmati rice for 15–20 minutes. Drain.
  2. Heat ghee in a wide pot. Sauté paneer until golden on 2–3 sides. Remove and set aside.
  3. In the same pot, sauté onions until soft. Add vegetables and cook 2–3 minutes.
  4. Stir in ½–¾ cup Rupen’s Korma Sauce. Add rice and gently mix.
  5. Add water and salt. Bring to a boil, then cover and simmer on low for 12–15 minutes.
  6. Rest 5 minutes. Fold in paneer. Fluff gently and garnish with cilantro.
