Instant Pot Masala Lentils


This is an easy, one-pot meal for cold days when you want something nourishing without much effort. Red lentils cook down beautifully in the Instant Pot, creating a comforting, stew-like texture.

Ingredients

  • 1 cup red lentils, rinsed

  • 1 leek, thinly sliced (white and light green parts)

  • 2 carrots, diced

  • 1 potato, diced

  • 1 stalk celery, diced

  • 1 jar Rupen’s Masala Curry Sauce

  • 3 cups vegetable stock

  • Salt and black pepper, to taste

 

Method
Add all ingredients to the Instant Pot and stir gently to combine. Secure the lid and set to Pressure Cook (High) for 8 minutes. Once done, allow a natural release for 10 minutes, then carefully release any remaining pressure.

Open the lid, stir well, and season with salt and pepper to taste. The lentils should be soft and creamy, with the vegetables tender but intact.

Serve warm on its own, or with rice or toast on the side.
