Kick start your new year's resolution with healthy vegan cooking! Our sweet potato fries are a great snack in the fall season. You can always play with the flavors, and be it rosemary or thyme, or even the warm flavors of curry as in this case, this healthy snack is a treat. They are easy to make. You can also include a variety of root vegetables such as turnips, carrots, onions, in this recipe.
2 lbs sweet potatoes, peeled and chopped into 1/2 inch thick fries
1/3 cup good quality olive oil
1 Tablespoon sweet paprika
1 Tablespoon sea salt
1 Tablespoon ground cumin
Flaked sea salt
1 teaspoon ground garam masala
Pre-heat oven at 400 F.
Meanwhile, in a mixing bowl, add the 'Rub' ingredients and mix.
Add sweet potatoes and toss until the rub is applied onto the sweet potatoes.
Line a large cookie sheet with parchment paper or a Silpat. Spread the sweet potatoes on it such that they did not stick to each other.
Bake for twenty minutes.
Garnish with flaked sea salt and garam masala, toss, and serve.
