Curried Turkey Sandwich with Mango Chutney


This sweet, tangy, and slightly spicy sandwich pairs wonderfully with a side of fresh fruit or a green salad.

Serves: 2

Ingredients

2 cups cooked turkey, shredded or chopped
2 tablespoons mayonnaise
1 teaspoon curry powder (adjust to taste)
2 tablespoons Rupen's Mango Chutney
2 tablespoons pecans, roughly chopped
2 tablespoons dried cranberries
4 slices of bread (or 2 rolls, naan, or wraps)
Lettuce leaves (optional, for crunch)

Instructions

In a bowl, mix the mayonnaise and curry powder until smooth.
Add the shredded turkey, pecans, and dried cranberries.
Toss until everything is well-coated.
Spread a generous layer of Rupen's Mango Chutney on one side of each bread slice.
Layer the curried turkey mixture evenly over two slices of bread. Add lettuce leaves if desired.
Top with the remaining bread slices to close the sandwiches.
