Ingredients:
6 chicken breasts, cut into bite-sized pieces
1 large onion, finely chopped
1 clove of garlic, minced
2 tablespoons peanut oil
1/2 cup coconut milk
1 cup chicken broth
1 bottle of Rupen's Konkan Curry Sauce (or any other curry sauce of your choice)
6 slices of canned pineapple in syrup, drained and cut into big slices
Salt and pepper to taste
Fresh cilantro for garnish (optional)
For the Brown Rice:
2 cups brown rice
4 cups water
Salt to taste
For Steamed Broccoli:
2 cups broccoli florets
Instructions:

Prepare Brown Rice:
- Rinse the brown rice under cold water until the water runs clear.
- In a saucepan, combine the rinsed brown rice, water, and a pinch of salt.
- Bring to a boil, then reduce the heat to low, cover, and simmer for 40-45 minutes or until the rice is tender and water is absorbed.

- Steam the broccoli florets until they are tender yet crisp, about 5-7 minutes. Set aside.

- Heat peanut oil in a large pan over medium heat. Add chopped onions and cook until translucent.
