Peri Peri Chicken

Indulge in a mouthwatering culinary experience with this Peri-Peri Chicken recipe. Marinated in a tantalizing blend of Rupen's Kandoo Marinade and vinegar, the butterflied chicken is roasted to perfection, creating a succulent dish with a perfect balance of spiciness and flavor.



  1. Preheat your oven to 375°F (190°C).

  2. In a bowl, mix 1/2 cup of Rupen's Kandoo Marinade with 1/2 cup of vinegar. This will be your flavorful peri-peri marinade.

  3. Place the butterflied chicken in a large dish and generously sprinkle with salt and pepper. Massage it all over the chicken.

  4. Pour 3/4 cup of the peri-peri marinade over the chicken, ensuring it is evenly coated. Reserve the remaining 1/4 cup of marinade for basting.

  5. Allow the chicken to marinate for at least 30 minutes. For enhanced flavor, marinate in the refrigerator for up to 24 hours.

  6. Preheat the oven to 375°F (190°C).

  7. Place the marinated butterflied chicken on a roasting pan or oven-safe dish.

  8. Roast the chicken in the preheated oven for about 45-60 minutes or until the internal temperature reaches 165°F (74°C). Baste the chicken with 1/4 cup of the reserved marinade every 15-20 minutes during the cooking process.

  9. Once the chicken is golden brown and cooked through, remove it from the oven.

  10. Allow the peri-peri chicken to rest for a few minutes before carving.
