Meal-Prep: Chicken Tikka Masala


For busy weeks, prepare a family-size tray of tender chicken in creamy tikka masala sauce, roasted green beans, and turmeric rice. Bake it together, portion it out, and you've got four restaurant-quality dinners ready to go.

Chicken Tikka Masala

Ingredients
2 cups chicken breasts, chopped in 2-inch cubes
1 jar of Rupen's Tikka Masala sauce


Instructions
Combine chicken breasts in a large baking tray with Rupen's Tikka Masala sauce.

 

Turmeric Basmati Rice

Ingredients
2 cups white basmati rice
1 teaspoon ground turmeric
Salt to taste
1 jar of Rupen's Tikka Masala sauce
 

Instructions
In one baking dish, combine ingredients with four cups water.

 

Toasted Green Beans

Ingredients
2 lbs green beans
2 Tablespoons olive oil
Salt to taste
 

Instructions
In a third baking dish, combine ingredients.
Baking all three dishes in the oven at the same time at 350 F for 25-30 minutes or until chicken is cooked and rice is tender. Serve all three components in a bowl.
