1 cup fresh cauliflower florets
1 cup carrots, diced
1 large potato, skin-on, rinsed, microwave for 6 minutes then dice (keep skin on)
1 cup green peas, here frozen peas are ok
2 tablespoons curry powder
1/2 teaspoon cayenne powder
1 green bell pepper, diced
2 tablespoon oil
1 cup shallots, thinly sliced
3 tablespoons chopped cilantro
Salt to taste
In a 5 qt wide pot, heat oil over medium heat, when the oil is hot, add cumin seeds and saute for a minute. Stir.
Add onions, jalapenos, saute for about 10 minutes, stirring every minute. Cook onions until golden brown. This will make onions sweet and give a nice sweet taste to the dish.
Add vegetables except potatoes, green peas and green bell peppers. Add in the spices and stir, adjust salt. Cook covered for about 10 minutes, stirring every 2 minutes.
Add the rest of the vegetables and cook covered for 3-4 minutes. Stirring a couple of times. Finally, garnish with cilantro and serve hot.
