3 green bell peppers, diced
2 tablespoon finely chopped garlic
2 tablespoon oil
1/2 teaspoon turmeric powder
1 teaspoon cumin powder
1 tablespoon coriander powder
1 teaspoon mango powder OPTIONAL
1 cup chickpea flour
1/4 teaspoon cayenne powder
In a 3 qt sauce pan, heat oil over medium heat and saute garlic for a minute. Add bell peppers and saute for about 5 minutes, stirring every minute.
Meanwhile, in a pan over medium low heat, saute chickpea flour for 10 minutes, or until light brown in color. This is required step to cook chickpea flour, which otherwise can give you constipation if consumed raw.
Add the powdered spices to the bell peppers and mix, cook for another 5 minutes.
Finally, add chickpea flour, adjust salt and add 2 tablespoon water to the bell peppers and saute for another 2-3 minutes.
Serve hot with Indian bread.
