SAAG is a sauce made from seasonal greens. Our recipe, a true culinary treat, is an ode to the women in Punjab who would manually pound these greens for hours.
The advent of spring brings Saag in Punjab. Seasonal greens such as spinach, fenugreek leaves, mustard greens, and fresh ginger are pounded for hours in a large mortar and pestle. Then, the leaves are sauteed with cumin, garlic, and ghee/butter. Sauteed Paneer or fresh corn cooked with these pounded greens makes the best saag. Of course, a dollop of ghee is a must!
Serving Size: 3
Directions: In a saucepan, on low heat, melt 4 tablespoons butter. Add 1 lb of vegetables OR poultry OR meat. Sauté for 10 minutes. Add sauce. Cover. Simmer for 10 minutes.
