4 cups fresh carrots, diced and grated (in a food processor or use a grater)
2 cups evaporated milk
2 tablespoons ghee
1 cup sweetened condensed milk
1/2 teaspoon cardamom powder
In a 3 qt sauce pan, heat ghee over medium heat.
Add carrots and saute for 5 minutes, stirring every minute.
Add evaporated milk, mix and cook covered on medium low heat for 15-20 minutes, stirring every 5 minutes.
Add sweetened condensed milk and cardamom powder, mix and cook covered for another 10 minutes, stirring a couple of times.
Serve hot or cold.
