Chutney Pinwheels


This appetizer is quite popular within the Indian community. Some of us may enjoy making our own puff pastry sheet but I will leave that up to you. You can also make the pinwheels ahead of time and freeze it. Right before serving, you can thaw the frozen pinwheels for 30 minutes and bake.

Ingredients

3 Tablespoons Rupen's Eggplant Chutney (Vangi)

1 Pepperidge Farm puff pastry sheet

1 1/2 cups fresh arugula


Instructions


Thaw frozen puff pastry sheet in the refrigerator for a couple of hours.

Remove from the refrigerator, open, and gently roll the sheet.

Apply chutney all over the puff pastry sheet (only on the rolled side). Make sure that you leave an inch from the sides of the spreadsheet.

Sprinkle arugula leaves all over the applied chutney.

Place the puff pastry sheet in the refrigerator for 15 minutes.

Pre-heat oven at 350 F.

Remove puff pastry and tight roll. Cut the puff pastry sheet in 8 or 10 pieces.

Place the swirls onto a baking sheet and bake for 25 minutes, or until golden brown. Serve warm.
